Coffee is already vegan. Milk is the part that is not, so here is the dairy free half of the bar: barista oat, almond and soy, from The Alternative Dairy Co.
Barista oat, almond and soy milk in the same 1 litre cartons we steam on the bar, plus a drinking chocolate made without milk powder.
Standard plant milk is formulated to drink cold. Barista lines are reformulated for heat and acid: more fat and protein to hold structure when steamed, and buffered so the acidity of a hot espresso does not curdle them.
That is the whole difference between a flat white that holds together and one that splits into curds while you carry it.
Oat is the safest and the one most cafes default to. It is sweet enough to balance espresso without sugar, and it textures closest to dairy.
Almond is lighter and nuttier, and the one most likely to separate in a very hot or very acidic shot. Steam it a little cooler.
Soy has the most protein of the three, so it holds foam longest, but it carries a stronger flavour of its own.
These are the cafe cartons, sold one litre at a time rather than by the case. Buy a single litre to see how it steams before you commit to it, or take three and cover the whole bar. Same formulation the cafes get, no case minimum.
