What ceremonial grade actually means
Grade is about which leaves were picked and how they were milled, not marketing.
- Ceremonial grade comes from the youngest leaves of the first harvest, stems and veins removed, stone-milled to a fine powder. It is bright green, it whisks smooth, and it is meant to be drunk with nothing but water.
- Culinary grade comes from later harvests and coarser milling. It is duller, more astringent, and designed to survive being mixed into milk, sugar or baking.
If you have only had matcha as a sweetened cafe latte, you have most likely been drinking culinary grade. This is not that.
How to prepare it
Usucha, thin. Sift 1 to 2 grams into a warm bowl. Add about 70ml of water at 70 to 80°C, never boiling, then whisk briskly in a W motion until a fine foam sits on top.
Koicha, thick. Double the matcha, halve the water, and knead rather than whisk. Denser and sweeter, and where good matcha shows its quality.
Matcha latte. Whisk usucha first, then pour steamed milk in. Whisking matcha directly into milk leaves lumps every time.
Water above roughly 85°C scalds matcha and turns it bitter. This is the single most common mistake, and it is not the matcha's fault.
Is 350g too much?
Honestly, for a lot of households, yes. At 2 grams a serve a 350g tin is around 175 bowls. Matcha oxidises once opened and is at its best within about a month or two, so this size suits:
- Cafes and juice bars going through matcha daily
- Households where more than one person drinks it regularly
- Anyone who already drinks matcha every morning and is tired of paying per-30g-tin prices
If you drink matcha occasionally, this tin will likely go flat before you finish it. We would rather tell you that than sell you one you regret. Store it airtight, away from light, and in the fridge once opened.
