How Long Do Coffee Beans Last? Roast Dates and Stale Beans

Coffee does not go off like milk, it goes stale. Here is how long beans and ground coffee stay good, and how to tell when they have faded.

Coffee beans rarely become unsafe. What happens instead is that they go stale: the aromas fade, the sweetness disappears and the cup tastes flat and papery. So the useful question is not whether coffee expires, but how long it tastes good.

How long coffee beans last

  • Whole beans, sealed: a few months in a sealed bag with a one-way valve, though they are at their best in the first few weeks after roasting.
  • Whole beans, opened: aim to finish them within two to four weeks.
  • Ground coffee, opened: about a week to two before the difference is obvious.

Coffee also needs a few days after roasting to release gas before it brews at its best, especially for espresso.

Do coffee beans expire?

The best before date on a bag is about quality, not safety. Old coffee stored dry will not make you ill, it will just taste of very little. The exception is beans that have been exposed to moisture: if they look mouldy or smell musty, throw them out.

Roast date vs best before date

A roast date tells you when the coffee was roasted, which is the number that matters. A best before date on its own is usually set many months after roasting and tells you far less. When you can, buy coffee with a roast date and buy it close to that date.

How to tell if coffee beans are stale

  • They smell of very little when you open the bag.
  • Espresso runs fast with thin, pale crema.
  • The cup tastes flat, woody or papery rather than sweet.

Keep them fresh for longer

Storage makes a big difference. Keep beans airtight, dark and cool, and freeze them in portions only if you have more than you will use in a month. We cover it in how to store coffee beans.

Do coffee beans go bad?

They go stale rather than bad. Stored dry, old coffee is safe but tastes flat. Discard beans only if they have been exposed to moisture or smell musty.

How long do coffee beans last once opened?

Two to four weeks for whole beans kept airtight and away from light and heat.

Can you use coffee beans after the best before date?

Yes, if they have been kept dry. Expect less flavour, and grind a little finer for espresso to compensate.
