Roasted coffee starts losing flavour the moment it leaves the roaster. You cannot stop that, but storage decides whether a bag tastes good for weeks or goes flat in days. The rules are simple: keep coffee away from air, light, heat and moisture.
The best way to store coffee beans
- Airtight. Oxygen is what makes coffee stale. Use the bag it came in if it has a one-way valve and a proper seal, or an airtight canister.
- Dark. Light degrades coffee. Clear jars on the bench look good and do the most damage.
- Cool, not cold. A cupboard away from the stove, kettle and sunny windows.
- Whole, not ground. Ground coffee has far more surface exposed to air and goes stale in days rather than weeks.
Why not the fridge?
The fridge is humid, and coffee absorbs moisture and smells. Every time you take cold beans out, condensation forms on them. A fridge makes coffee worse, not fresher.
Can you freeze coffee beans?
Yes, if you do it properly. Freezing slows staling, which is useful if you have bought more than you can finish in a month.
- Freeze only whole beans, in airtight bags with the air pressed out.
- Split them into portions you will use in a week or so.
- Take out one portion and let it reach room temperature before opening, so condensation does not form on the beans.
- Never put beans back in the freezer once thawed.
If you finish a bag within a month, you do not need to freeze anything.
Buy less, more often
The simplest storage strategy is buying an amount you will finish in two to four weeks. That is why we sell 250g bags as well as 1kg, and grind to order rather than selling pre-ground stock.
