Every decaf coffee here is water processed. Most of the range uses the Mountain Water process; Di Stefano Decaffeinato uses the Swiss Water Process. Both take the caffeine out with water rather than methylene chloride or ethyl acetate, which is why they still taste like coffee.
They work on the same principle. Green beans soak in water already saturated with coffee solubles, so only the caffeine moves out. The names refer to where it is done: Swiss Water in Canada, Mountain Water in Mexico. Neither uses chemical solvents. Read how decaf coffee is made.
Not quite. Decaffeination removes about 97 to 99.9% of the caffeine, leaving roughly 2 to 7mg in a cup against 80 to 100mg in a regular double shot. See how much caffeine is in coffee.
Decaffeination leaves the bean more porous, so decaf goes stale faster than regular coffee. Buy 250g at a time unless you drink it daily. Our decaf coffee guide covers this in more detail.
