A red honey Marsellesa from Veracruz: cherry, brown sugar and honey.
This lot of the Marsellesa variety is grown in the Veracruz highlands through The Santuario Project. It is finished by the red honey process, where much of the cherry's sticky mucilage is left on the bean while it dries, adding sweetness and body.
The cup is ripe red fruit and honeyed sweetness with light florals, finishing on cherry, brown sugar and honey. It holds up equally well as espresso or filter.
250g bag, whole bean or ground for espresso, filter or plunger. Delivered Australia wide, shipping calculated by weight at checkout.

Explore more: Single origin coffee beans · Di Stefano range · Single origin vs blend
A blend mixes beans from more than one farm or country, balanced by the roaster so the cup tastes the same bag after bag. A single origin comes from one place, so it tastes distinctly of where it grew and shifts a little with each harvest.
This one is a single origin.
Ground fresh on the day we dispatch, not pulled off a shelf. If you are between two, whole bean keeps best.
Ground to your chosen brew method on the day we dispatch.
Pick the brew method you actually use and we grind to match it: espresso, filter, plunger, stovetop or Turkish. Choose whole bean if you have a grinder at home, which will always give you the better cup.
We grind and dispatch on the same day rather than pulling a pre-ground bag off a shelf, so the coffee is as close to roast-fresh as mail order gets.
Keep the bag sealed and out of the light and it will hold up for roughly two to four weeks after opening. Whole beans hold longer than ground. Do not refrigerate it.
Yes. We run a prepaid twelve month coffee subscription: pay once, choose four coffees and how often you want them, and a kilo arrives on schedule for a year.
