Description
Chocolate powder for drinks and for dusting, in 750g and 2kg.
Sourced from chocolatiers and then formulated into a drinking chocolate, which is a different problem from making a bar: it has to dissolve cleanly and taste right hot or cold. This one does both, and it doubles as the dusting powder for cappuccinos.
Made in Australia from local and imported ingredients. Two heaped teaspoons for an 8oz cup, three for a 12oz, four for a 16oz. Dissolve in hot water, then top with frothed milk. The 2kg pack is the sensible buy for a venue.

Ceremonial grade is made from young first-harvest leaves and is meant to be whisked with water and drunk on its own. Culinary grade is designed to hold its flavour against milk and sugar in lattes and baking.
Sift a small measure into a bowl, add water at around 80 degrees rather than boiling, and whisk briskly until it foams. For a latte, make that paste first and then add your milk.
Keep it sealed, cold and away from light. Matcha loses colour and sweetness quickly once air reaches it, so reseal it properly after every use.
